Palazzo might not be a bad place to try. Brand-new, luxurious hotel that reportedly opened a brand-new, sizable book within the last month or so. I haven't seen it yet, but i know the Venetian set-up is very nice (except that it's too small). A larger version of the Venetian book without a a built-up clientele (i.e. crowd of people) would probably be perfect. If taht doesn't work for you, you're right across the street from Wynn (and their wide array of matchups).
